One easy way to get outside is to bring or make something delicious to eat outdoors.
Elin & Christian, with their account @aktivtfamiljeliv and inspiration site Aktivtfamiljeliv.se, inspire small and large adventures where everyone in the family can participate. They live in Edsbyn in Hälsingland, where the Fibr factory is located, and are true inspirers for getting out into nature more – without it having to be complicated!
Fibr's pancake mix makes easy-to-cook pancakes that taste just like regular wheat pancakes, but are made from 100% gluten-free oats.
"Wow, this might be the tastiest thing I've ever eaten!" was the verdict from Elin's son Nils. The pancakes also work just as well to cook outdoors. Elin's tips:
Prepare by mixing the batter at home. For those who like saffron, it's extra good around Advent. Light a fire and fry them in butter on a griddle or set up and cook the pancakes on a camping stove.
Recipe for 5-6 servings
- 225 g (1 bag) Fibr Pancake Mix
- 0.5 g (1 sachet) saffron
- 8 dl milk beverage of choice
- 4 eggs or egg substitute
- cooking fat of choice for frying
Instructions:
- Whisk the flour mix into half of the milk beverage until it forms a smooth batter.
- Whisk in the remaining milk beverage and eggs or egg substitute.
- Let the batter stand for 10 minutes.
- Heat the frying pan over high heat, then reduce to medium temperature.
- Pour in batter and let the pancake set before flipping it.
Top with your favorite toppings. Elin chose whipped cream, raspberries, and a little syrup.
