För oss på Fibr är det både roligt och lite märkligt att se. För när vi började 2019 var fiber inte direkt det mest trendiga man kunde bygga ett livsmedelsföretag kring. Men det var precis det vi gjorde. 2018 hade Therese skrivit min C-uppsats om betaglukaner, en typ av fiber som finns naturligt i havre och som är särskilt välstuderade. Adam är dietist och tillsammans började vi fundera på en ganska enkel fråga: Går det att göra det enklare och godare att få i sig mer fiber?

Jag läste nyligen en artikel från Karolinska Institutet om matöverkänslighet i Sverige. Som medgrundare av Fibr är det här ett ämne som ligger nära det vi gör. Inte för att alla som upplever problem med mat har samma diagnos, utan för att artikeln påminner om något viktigt: Fika är inte lika enkelt för alla. 

Vi brukar tänka på måltider som separata händelser. Du äter frukost, några timmar går och sedan äter du lunch.

Men forskning visar att en måltid i vissa fall kan påverka kroppens respons även flera timmar senare.

Inom nutritionsforskningen finns ett intressant fenomen som brukar kallas “second meal effect”, vilket betyder ungefär effekten vid nästa måltid.

Det innebär att det du äter vid en måltid i vissa studier har visat sig kunna påverka kroppens blodsockerrespons även när du äter nästa måltid flera timmar senare.

That we think fiber is among the best things out there is perhaps no news. Dietary fiber is an important part of a healthy diet, but most of us don't get the amount we need every day. It can be especially difficult with dietary restrictions, for example due to food allergies or autoimmune diseases such as celiac disease. But why is fiber so good, really?

Den första idén var faktiskt en dryck, men det landade till sist i en bar.

For those living with allergies, the reality is often different. Before you can even consider what you're craving, you need an answer to a much more important question: What can I eat?

I was reminded of this again during a coffee break this weekend when we were on Gotland. When I asked which pastries were egg-free, I was met with that familiar uncertainty behind the counter. A quick glance at colleagues, a trip to the kitchen, and an attempt to find the right information. You don't want to be a nuisance, but at the same time, you need to be able to trust the answer.

The idea for what was to become Fibr was born in 2019 when I, Therese, was still an agronomy student at the Swedish University of Agricultural Sciences. After writing my thesis on oat fibers, specifically the fibers called beta-glucans and how they affect the gut microbiota, I couldn't shake the idea that it should be easier for people to eat more of them.
